Description: The ISA01-CC dataset includes about 300 strains of lactic acid bacteria and 400 strains of yeasts. The strains are mainly isolated from the Mediterranean agro-food systems and typical fermented foods (sourdough, dairy products, wine and grape, cereals, whey) and human faeces. The main species collected among lactic acid bacteria are: Levilactobacillus brevis, Companilactobacillus alimentarius, Leuconostoc pseudomesenteroides, Fructilactobacillus sanfranciscensis, Lacticaseibacillus casei, Lacticaseibacillus rhamnosus, etc. The main species collected among yeasts are Saccharomyces cerevisiae, Hanseniaspora guilliermondii, H. uvarum, Pichia kudriavzevii, Met. fructicula.
